Thought of the day: the omelette is merely a side-effect.

Every time I crack an egg? That's just practice, for the next time I have to crack an egg.

The best way to crack an egg is not, as many think, to hit it with a knife or on the side of a bowl. You whack it on the table. The flat surface gives you a cleaner crack and thus a lower chance of tiny pieces of eggshell getting into your food.

THE MORE YOU KNOW.

Hm.

OK, I'll try it!

It is a result of cracking an egg and breaking the yolk.
If the yolk remains intact, it's going over easy.

I hear you on this.

Every meal I cook or baked goods I make are just a side-effect of needing something to do while I practice drinking wine.

@limom - that rule would get me a lot of egg-over-easy omelettes! Nah, I'm kidding, I always go for over-medium.

@Mel - ...

It's going to take me a while on this. This needs the perfect comeback or none at all!
